At the end of last month I spent 10 days developing 5 breakfast casserole recipes for The Kitchn. It was a whirlwind of casserole baking, with several dishes made in a single day. So many delicious casseroles were consumed and shot. Whew, I’m tired just thinking about it. But it was so much fun and so awesome to see my work being published by one of the very first food sites I ever started reading. It is an amazing source for home cooks with a huge readership and wonderfully opinionated readers. If you have any cooking questions, just do a search on the site and most likely at some point in its 12 year history that question has been answered before.
All of the recipes in this series are simple to make but filled with fresh ingredients and vibrant flavors. Most of them can either be made ahead of time or the components can be made and then simply thrown together before breakfast. They are all wonderful crowd pleasers that would impress any guests you may have over. If only feeding you and your family, they also heat up well the next day. Only requiring a little forethought, you can serve a delicious breakfast full of punchy flavor with minimal effort.
Each dish here is also easily customizable. Simply think of these recipes as guidelines to toss in what you have on hand or ingredients that you prefer. There is nothing rigid here and that is what makes cooking fun.
